If you are like me, life is busy…which means I am all for comfort food placed in my slow cooker or instant pot for the day. I love nothing better than the good smells filling our cottage all while I know that supper, as we call it in the deep south, will be ready right on time to end the day. Instant Pot Peach Chicken Taco Bowl

Anytime I fix a meal and the mister responds with…” this should be added into our rotation for meals”…I know I’ve hit a good one! He will eat anything…and never complains and is not a picky eater, for which I am very grateful. I’m a pretty basic cook…you know the comfort food, down home kind of person.
Nothing fancy…nothing that takes hours to prep and cook…but we do like good food! This one was a hit, that’s for sure!

How to Make Instant Pot Peach Chicken Taco Bowl
It’s a simple dump and go meal, with little prep…it takes longer to cook the chicken than anything…but the positive you can place that in your Instant pot, walk away and dinner is cooking for you…you don’t have to stand over the stove! Here’s how to make this Instant Pot Peach Chicken Taco Bowl
Ingredients:
3 chicken breasts
1 can of Luck’s Fried Peaches
2 cups of rice
1 cup of water
3 Small Sweet Peppers
1/2 Red Onion
1 Small Tomato
1 Avocado
1/2 cup Cilantro
Sour Cream
Cheddar Cheese
Place your chicken, rice, 1 cup of water and can of peaches in your instant pot. Pressure-Cook for 30 minutes.
Chop sweet peppers, red onion, tomato and cilantro- mix together
Slice avocado
Place a spoonful of the chicken/rice at the bottom of your bowl and then top with chopped veggies, avocado, dollop of sour cream and a small amount of cheddar cheese and a few tortilla chips on the side
Your Instant Pot Peach Chicken Taco Bowl is ready to serve! Pair it with some tortilla chips and you’re done!
