This Instant Pot Chicken Fajita Taco recipe is the easiest and yummiest I’ve ever tasted. I love the fact that in 40 minutes my chicken taco meat is ready for me to serve my family. All while during that 40 minutes, 10 of it I prepped the toppings and the other 30 I was literally reading to my little one on the couch spending quality time together!
My favorite thing about this Instant Pot Chicken Fajita Recipe is that I can get about 3-4 meals off of it for our family. After we have had tacos with the meat a few nights later I’ll usually serve it as a salad vs a tortilla! I usually then freeze a portion for a later meal! This is my kind of cooking friend!
How to Make an Instant Pot Chicken Fajita Taco
Here’s how to make this Instant Pot Chicken Fajita recipe…
Ingredients:
3 chicken breasts
4 Peppers – sliced
1 Onion – sliced
4 Tomatoes – sliced
1 Pack of Taco or Fajita Seasoning
I lay my 3 chicken breasts in the pot, cut up 4 peppers, 1 onion and 4 tomatoes. Sprinkle my seasoning and wa-lah!
Step 1 –
Lay 3 Chicken breasts in your pot. Place sliced peppers, onion and tomatoes around your chicken. I use two packets of taco seasoning or fajita seasoning if you have it along with 3 TBSP of lime juice.
Start your Instant Pot for your meat setting, start it and step away – it’s done!
Come back 40 minutes later….
Your Instant Pot Chicken Fajita Recipe is ready to serve! I always pair it with avocado or make guacamole if I’m feeling inspired…topped with cheese, sour cream and a handful of tortilla chips on the side.
It’s always a hit at our house.
