It’s January, which means birthday month for me…plus three others on my side of the extended family. It’s a busy month for celebrating those we love, but it sure makes it fun!
Breakfast in our home is among our favorites…between my husband and my little one I think they could eat breakfast food all day everyday…so every now and then I have to change things up for the menu…and this one sure didn’t disappoint! I found a new favorite for upgrading our quick and easy breakfasts and that is the McCormick Good Morning Breakfast Toppers I found at my local Walmart. These were new to me and I was quite excited to come across them! I snagged a couple of flavors and decided to not only use them for our fast mornings…quick and go, type breakfast but incorporate them into my scone recipe!!!! The Crunch and Flavor (Toppers): Give your breakfast favorites an instant flavor upgrade. Sprinkle on yogurt, cottage cheese or fruit. Stir into hot cereal for a crunchy twist. Shake on buttered bagels or toast. You just can’t go wrong!!!!
One of our new family traditions for birthdays is having a yummy breakfast/brunch menu to celebrate…we usually end up celebrating with an evening out to eat dinner too, but when it calls for the family get-together we’ve been making a spread of our favorite brunch food. It’s been quite the hit!
Anytime I can get an excuse to make a scone, I’m all in. I love making them because I love eating them…but I can’t make them when I know they will just sit in my kitchen…because I will be the one that eats them all! So when there is a celebration I use this opportunity to get creative and share the goodness!
Among the spread are many other yummy and delicious dishes…from savory, to sweet…but I have to say the scones are usually one of the first to disappear! So I’m adding these delicious Blueberry Almond scones to our birthday brunch menu for the month of January birthdays!
Blueberry Almond Scone Recipe
Ingredients
1 McCormick Breakfast Toppers – Blueberry Ginger with Chia and Flax
1/3 cup sugar
2 cups all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, frozen
1/2 cup sour cream
1 large egg
3 tbs unsalted butter, melted
1 cup confectioners’ sugar
1/2 tsp almond extract
1/3 c. Slivered Almonds
Instructions
-Preheat oven to 400 degrees. Line a baking sheet with parchment paper, set aside.
-In a medium-sized bowl, gently toss flour, baking powder, baking soda, sugar, almonds and salt. Set aside.
-In a separate small bowl, whisk sour cream and egg until completely smooth. Set aside.
-Pour in flour mixture and toss to combine.
-Grate frozen butter into mixture.
-Using your hands, work in the butter until the mixture resembles a coarse meal.
-Gently stir in sour cream mixture until just about combined. Do not over work the dough! Again, very gently press the dough against the sides of the bowl a few times and form a ball. The dough will be sticky at first but will come together as you form it.
-Place dough on a lightly floured surface and lightly pat into an 8″ circle about 3/4″ thick.
-Use a very sharp knife to cut into 8 triangles (like a pizza). Transfer triangles onto prepared baking sheet. You can arrange them in two rows, 4 in each row, or arrange them in a circle shape – leaving about 1″ between each one.
-Bake scones for 15-17 minutes or until the tops begin to golden. Don’t take them out too early or they will be too soft.
-Allow them to cool for 10 minutes on the pan before transferring onto a wire rack to finish cooling completely.
-During this time, prepare glaze.
-Stir together melted butter, confectioner’s sugar and almond extract until smooth.
-Once completely cooled, go ahead and either dip the tops of the scones into the glaze or drizzle it on top with a spoon.
-Lastly, generously sprinkle the McCormick Breakfast Toppers – Blueberry Ginger with Chia and Flax.
-Finally, Enjoy!
