Meatloaf Muffin Recipe
I’m a French Fry girl. I’ll not deny it and I’ll be the first to raise my hand and admit it!

You’ll always find fries in our freezer so when I need to whip together a quick meal I’ve got a great side to add. Our new favorite to have stocked is the Grown In Idaho Super Crispy Crinkle Cut Fries and Grown In Idaho Crispy Potato Puffs. These are the gold standard in potatoes…because we all know that food tastes best when it’s made with real, quality, ingredients! Everyone loves these fries and that makes meal time simple and easy on this mama!
We had some family over last week and this meal was a hit! I served the meatloaf muffins (packed with yummy zucchini, Grown In Idaho Crispy Potato Puffs, cheese and seasonings then served as muffins…served with a side salad, green beans and the Grown In Idaho Super Crispy Crinkle Cut Fries. We then pulled out a family game and had many laughs and fun together. It was the perfect meal to end the day and start the night with family…can I just say there were no leftovers?!?!
This recipe isn’t your typical “meatloaf” that is dense and lacking in taste…it’s also not a family secret recipe so I hope you’ll give it a try for your next meal plan/rotation!
Side note: If you have extra meatloaf muffins these freeze very well and make a great meal to just pop out of the freezer, thaw and pop in the oven for a few minutes!
Grown in Idaho also has two other styles at our local Winn Dixie,which we haven’t been able to try yet but it’s on my list for the next grocery run…we love the idea of 100% grown in Idaho! You can find these in the freezer aisle at your local grocery store -Grown In Idaho Super Crispy Shoestring Fries and Grown In Idaho Hand-Cut Style Fries.
Meatloaf Muffins
- 1 lb Ground beef
- 4 oz Zucchini, unpeeled & shredded
- 1 Egg
- 1/2 c. Shredded Cheddar Cheese
- 1/2 pkg Seasoned Stuffing Mix
- 1/4 c Parmesan Cheese
- 1/2 tsp. Minced Garlic
- 1 tsp. Worcestershire Sauce
- 1/4 c. Ketchup
- 1/4 c. Onion, chopped
- 1 c. Grown In Idaho Crispy Potato Puffs, chopped
Mix all ingredients together, by hand.
Divide into muffin tins.
Bake 30-40 minutes at 350 degrees.
