As we’ve gotten into our new school year routine and rhythm I find myself loving and thriving on our schedule.  One priority has been to get back into a regular pattern of exercise. Making my morning routine solid with a plan has certainly helped.  Thanks to this easy recipe using Kellogg’s® Special K® Red Berries and Light & Fit® Original Greek Strawberry yogurt (both found at Target!) my breakfast routine has been “kicked up a notch!”  I’m loving the new change to fuel my day with a fast start! #breakfastison

What I love about the Strawberry Overnight Oats is that I can make it up ahead of time – and within 10 minutes I’ve got 3-4 mornings of breakfasts made up ahead of time – BAM!   You can easily double or triple this recipe at any given time if you need to. I also love that Special K Red Berries provides a good source of fiber per serving and Light & Fit Original Greek Strawberry yogurt is serving up 12g of protein per serving!

Strawberry Overnight Oats Recipe

  • 1 and 1/4 cup Kellogg’s® Special K® Red Berries
  • 1 cup Light & Fit® Original Greek Strawberry
  • 1 cup Almond Milk
  • 1 1/2 cups Oats
  • 4 Fresh Strawberries, sliced
  1. Mix oats and ½ cup of Kellogg’s Special K Red Berries together.

  2. Stir Light & Fit Original Greek yogurt and Almond Milk into the dry ingredients (step 1)

  3. Pour into glass jar filling up about ¾ the way to the top.  Leaving room at the top for step 4.

  4. Place sliced strawberries on top and sprinkle with remaining Special K Red Berries – evenly distributing across the 3-4 jars you are filling up

  5. Place lids on jars and refrigerate up to 6 hours before eating.

Variations:

You can vary your Special K with their seasonal flavors: Kellogg’s® Special K® Pumpkin Spice Crunch or Kellogg’s® Special K® Apple Cinnamon Crunch Cereal.

Substitute Almond Milk for any “milk” liquid you’d like i.e. regular milk, cashew milk etc.

A few questions I’ve gotten about overnight oats and I’ll see if I can answer them the best to my ability for you all:

Do you eat overnight oats hot or cold?

I eat it cold!  I think the original intention is to eat them cold, however who says you can’t heat it up?   I just love the fresh and cool taste they give especially after a hot and sweaty workout! The idea with the oats though is that you’ve soaked them overnight and they’ve become soft rather than the typical hard fresh oats.

How long do overnight oats last?

Overnight oats can be stored in an airtight container for up to five days in the refrigerator.  Honestly they don’t usually last that long in our fridge!!

Which oats are best for overnight oats? Old fashioned rolled oats or instant oats – I’d steer away from steel cut as you can expect them to very chewy and fairly dense.

So make up this new special breakfast recipe filled with fruit and goodness – place it in the fridge the night before and go get your beauty rest!  It’s that simple.

Why choose these two great items for this recipe?  Because…Special K is a good source of fiber with 140 nourishing calories per the 1 and 1/4 cup serving size!  Paired with Light and Fit with 12g of protein and only 80 calories! Both of these items can be found at Target in your breakfast cereal aisle and in your refrigerated section!  Don’t forget to snag your extra savings with the Cartwheel offer from Target.
