We all have a “Meal Maker” that we can say thank you to, that has impacted our lives.  I have a goodly heritage with a mom, grandmother, aunts and great aunts who truly are some of the best cooks there are.  With that heritage I can say I’ve learned from some of the BEST when it comes to making a home cooked meal to set on the table for my family.  Whether it’s homemade biscuits with our favorite strawberries and cream or it’s the fresh vegetables cooked from the garden.  I truly can say thank you to those Meal Makers who have taught me so well by example.

One of our favorites was always a picnic on a gorgeous day or when we were traveling distances to see family.  I want to share a favorite Apricot Chipotle Spread Recipe we use to change up the typical sandwich at lunch and we hope you enjoy!

Apricot Chipotle Spread Recipe

1/2 c. dried apricots
1/4 c. hot water
2 Tbsp. fresh lime juice
1 c. Mayonaise
1/2 can chipotle chili peppers in adobo sauce
2 Tbsp. finely chopped green onions
1 Tbsp. adobo sauce from can

1- Combine apricots, hot water and lime juice. Let stand for 15 minutes – drain and pat dry, coarsely chop.
2- Stir together mayo, peppers, onions and adobo sauce. Mix and cover to chill.
** I cut back on my peppers (also I remove the seeds) and the sauce – I adjust it to our personal taste because it can potentially get very hot! Just warning you!!
