Mini BBQ Chicken Pizza Recipe

At our house we love pizza…any kind, really!  These mini BBQ Chicken pizzas are a favorite for lunch or even a quick dinner on our way out the door.  Not to mention during all of the Christmas parties that are ahead they are the perfect appetizer to bring along to the party.

Did I mention how easy and fast they are to prep and cook?  Tops 15 minutes!  That’s my kind of cooking!

First…grab ingredients and make a quick and easy, delicious snack…meal…appetizer…or just because I want to eat pizza!.

INGREDIENTS

3/4 cup barbecue sauce
1 cup shredded cooked chicken
1/3 cup shredded smoked gouda cheese
1/3 cup shredded mozzarella cheese
4 BAYS English Muffins, any variety, split, un-toasted
1 tablespoon finely chopped red onion

INSTRUCTIONS

Preheat oven to 400°F.

Mix barbecue sauce and chicken in medium bowl. Mix cheeses in small bowl.

Place muffin halves on baking sheet. Top evenly with chicken mixture; sprinkle with onion and cheese.

Bake 12 to 14 minutes or until cheese is melted and lightly browned.

There are four different varieties of Bays English Muffins to use in your recipes or with your favorite spreads: Original, Sourdough, Multi-Grain and Honey Wheat. Find them in your grocer’s refrigerated case next to the eggs – not in the bread aisle.

I’m anxious to try this delicious looking breakfast recipe!  Breakfast is huge at our house…my husband and little love breakfast….like love!
