How to Make Instant Pot Chicken Stew
Here’s how to make this Instant Pot Chicken Stew.
Step 1 – Place your chicken breasts and V-8 Juice (<–secret ingredient) in the Instant Pot together and you will cook this first.
Step 2 – Once your chicken is cooked, you will add all of your vegetables and seasoning, let it simmer and it’s ready to eat!
Your Instant Pot Chicken Stew is ready to serve! I love to serve it with crackers or if I’m feeling up to it is with some cornbread!

Instant Pot Chicken Stew
- 2 lbs Chicken Breasts
- 1 64 oz V-8 Juice
- 1 8 oz can whole kernel corn
- 1 8 oz can sweet peas
- 1 8 oz can white potatoes
- 1 8 oz can carrots
- 1 TBSP Basil
1 – Place your chicken breasts and V-8 juice in your Instant Pot and pressure on meat setting. I like my chicken to shred easy so I did my time setting for 30 minutes. Let the pressure release naturally.
2- Once your Instant Pot has finished pressuring your chicken in the V-8 juice, add your whole kernel corn, sweet peas, carrots, white potatoes and basil.
3- Set your Instant Pot on slow cooker for 20 minutes and your stew will heat up to serve.
*As with any stew recipe it tastes better the next day after all of your juices and spices have simmered together!
*This is a perfect freezer meal as well.
