Chicken Instant Pot Recipe

Instant Pot Chicken Stew

  • 2 lbs Chicken Breasts
  • 1 64 oz V-8 Juice
  • 1 8 oz can whole kernel corn
  • 1 8 oz can sweet peas
  • 1 8 oz can white potatoes
  • 1 8 oz can carrots
  • 1 TBSP Basil
  1. 1 – Place your chicken breasts and V-8 juice in your Instant Pot and pressure on meat setting.  I like my chicken to shred easy so I did my time setting for 30 minutes.  Let the pressure release naturally.

2- Once your Instant Pot has finished pressuring your chicken in the V-8 juice, add your whole kernel corn, sweet peas, carrots, white potatoes and basil.

3- Set your Instant Pot on slow cooker for 20 minutes and your stew will heat up to serve.

*As with any stew recipe it tastes better the next day after all of your juices and spices have simmered together!

*This is a perfect freezer meal as well.
