It’s fall time.
Here in south Mississippi we are anxiously awaiting the fall weather to arrive. Two weeks ago we had a total tease…it was perfect fall weather. So much so I bought pumpkins for the front porch along with a beautiful yellow mum. Only for it to turn hot and humid again a few days later.
Fast forward to today and we’re getting a cool front here in the next day or two! I’m doing a happy dance, all because one of our favorite fall activities is to light a campfire or fire in our pit, put on our hoodies and sit under the moon and stars and enjoy the weather. Many times we’ll put the little one to bed and have a little date night under the moonlit sky.
So I wanted to share with you a favorite campfire recipe we like…I especially like it because there is NO clean up. Seriously none…this is life altering and changing…so much so I’d like to make this a nightly tradition in our meal plan, but reality is I can’t!
Foil pack meals are the best and here’s the low down.

Tear off about a 15″ piece of aluminum foil per meal packet. Then you’ll place the whole “recipe” in one packet…fold up and lay it on the grill, fire pit or in your oven!
Eat it with a fork in the packet…throw the foil away- clean up is DONE!
Our recent favorite is the Honey Lime Chicken and this time I paired it with a pan of skillet nachos- because everything is better with some cheese and chips! We love to add a little El Yucateco® Green Chile Habanero sauce (#1 consumer choice) to our chicken and nachos…El Yucateco®’s ingredients come from Field to Bottle. It includes no artificial colors, but the same great taste that makes it the King of Flavor since 1968. This is conveniently found in your local Walmart along with many other varieties that are on our list to try!
