Fig Prune Summer Salad RecipeIt’s summer time and I am all about recipes that are healthy, easy to make and a meal that doesn’t heat up my kitchen!

This is also a favorite because I can prep it for the week ahead and have a lunch or side-salad prepped ahead of time.  That’s always a huge plus for me as well – saving time is right at the top of my list for sure!

I mentioned I am all about recipes that are healthy…within this recipe you’ll find Mariani Probiotic Pitted Prunes (from your convenient Walmart!) as an ingredient.  These Probiotic Prunes are made using California grown prunes with a prebiotic + probiotic that supports overall wellness and digestive health.  Here is a quick video to help educate you more!

Ingredients needed:

  • Red Leaf and Green Leaf Lettuce
  • Mariani Probiotic Pitted Prunes
  • Brousin Cheese
  • Fresh Figs
  • Sugar Pecans (recipe below)
  • Bacon Bits
  • Dressing (recipe below)

Fig Prune Summer Salad Recipe

Dressing:

  • 1/2 tsp. Minced Garlic
  • 2 1/2 Tbsp Dijon Mustard
  • 1/3 C. Honey
  • 3/4 C. Apple Juice
  • 1/2 tsp. Black Pepper
  • 1/3 C. Apple Cider Vinegar
  • 1 1/3 C. Oil

Process all ingredients except oil in a food processor or blender.  Drizzle in oil while machine is running.

Sugar Pecans:

  • 1 Egg White
  • 1 tsp. Cold Water
  • 4 C. Pecans
  • 1/2 C. Sugar
  • 1/4 tsp. Salt
  1. Beat egg white and water until fluffy.
  2. Add pecans and coat well.
  3. Mix sugar and salt.
  4. Add to nuts and coat well.
  5. Pour into buttered cookie pan.
  6. Bake at 225 degrees for 1 hour and stir often.
