I am always on the hunt for yummy meals that my whole family loves aka kid friendly…at the same time you know I’m all about easy and quick! This yummy Chipotle Slaw Alaska pollock Taco Recipe using Alaska whitefish is one for the books my friends.
Well this one sure didn’t disappoint us last night. A friend of mine kept talking about her families favorite “slob” meal as she called it…she told me about the recipe I just never took the time to get it from her and try it. I wish I had gotten it back when she first told me about it! Oh well, it’s better late than never.
I always try to think outside of the box for our meals. I know that fish is so so so good for you and so this recipe allows me to use Alaska pollock within my recipe. Alaska whitefish varieties are sold fresh and frozen year-round for a wide-range of seafood possibilities and healthful options. I asked for fresh in our seafood department but they didn’t have any in so I grabbed some frozen and it was just as tasty!
Has your husband ever looked at you after eating a meal and said “this is a good one to put on the meal rotation plan”! Well when those words come out of my husbands mouth I sure listen up and take him up on it! I hope you’ll give it a try and not wait like I did to try it!
Recipe for Chipotle Slaw Alaska pollock Taco
Ingredients:
4 fillets – Alaska Pollock
All Purpose Seasoning
2 Tbsp Olive Oil
For Chipotle Slaw:
1 Bag Coleslaw Mix
2 Whole Green Onions, Sliced
1 can corn, drained
1 can black beans, drained & rinsed
1 whole Chipotle Chile from a can of chipotle chiles in adobo sauce
1/2 cup Mayonaise
1/2 cup Sour Cream
1/2 cup Buttermilk
2 tsp. Lime Juice
1/2 tsp. Cumin
1/2 tsp. Garlic Powder
1/2 tsp. Pink Himalayan Salt
1/4 cup Finely Chopped Cilantro
Soft Taco Tortillas
Step by Step:
1- To make the chipotle slaw: In a large bowl mix slaw, green onions, corn and black beans. Set aside
2- In a small food processor add chipotle chile (I took seeds out so it wasn’t too hot for kids!) mayo, sour cream, buttermilk, lime juice, cumin, garlic powder and salt. Pulse until well combined.
3- Add cilantro and mix with a spoon.
4- Add the slaw mixture and stir well.
5- Let chill in the refrigerator while you prepare Alaska pollock
Prepare your Alaska Pollock: Place olive oil in a frying pan and generously sprinkle all purpose seasoning on your Alaska pollock and pan fry until pollock is completely cooked, about 3-4 minutes on each side.
Place Alaska pollock in tortilla and top with slaw…prepare for a delicious meal!
